White Water Rafting the Lower New

On to part 2 of my West Virginia adventure!

Sunday was a rainy day, so we decided to spend a lot of time driving around town visiting relatives and seeing some of the more ‘historical’ parts of the area.  We drove up to the exhibition coal mine in Beckley, but just missed a tour that had started 20 minutes before we arrived.  It was interesting to look at the buildings that were preserved around the mine compound.  There was a school, several preserved houses, a church and an outhouse or two 🙂  It was a good representation of early 20th century coal camp life.  Something my aunt and uncle told me that I found rather interesting was that single men and men who were married had completely different houses.  Married men had houses that featured 2 or 3 bedrooms with 1 bathroom, while unmarried men basically lived in a glorified closet.  Guess it paid off to be married back then!

For lunch, we stopped at one of my favorite places to eat in Fayetteville, Cathedral Cafe.  The cafe is actually inside an old cathedral and has some of the original decor and stained glass still inside.

It’s cute and quaint and a lot of the produce and meat is local and sustainable.  I wasn’t too hungry when we got there so I opted to order a side salad and some of their homemade hummus with pita.  Both were delicious!

We took it easy Sunday evening because we had to be up bright and early Monday for our rafting trip!

Our trip kicked off around 10:00 a.m.and we were greeted by the river with a gorgeous view.

The New River Gorge is a popular trip in West Virginia that is divided up into two sections – the Upper New and the Lower New.  The Upper New is good for families and people who may be a little too timid to go down big rapids, while the Lower New River is the real white water rafting with class IV-V rapids.

We opted for the Lower New, of course 🙂

Brian and I were in an 8 person raft, not including our awesome guide Andy McFly, and everyone who was with us seemed to be around our age, relatively young and athletic.  This is always a good sign because if you have good people in your raft, your guide is more likely to take you down the ‘fun’ routes on the rapids.

The trip was awesome.  We got wet… we got wild… and had an amazing time.

About halfway down the Lower we pit stopped for lunch on a beach off the river and ate some deli sandwiches, fruit, chips and such.  You don’t realize how much of your body you are using when going down the rapids, so once we stopped I realized just HOW HUNGRY I was.

There were sections on the river where our guides let us do really fun stuff.  We got to purposely jump out of the raft along and swim in the currents.  There were a couple class II rapids that they let us go down with our own bodies (instead of in the rafts).  That was a blast, although I did get a fare share of water up my nose!  We stopped on the sides to jump off large rocks into the water and even got to go “surfing”, which is basically turning your raft around into the current and finding that sweet spot pocket of air that allows the raft to feel like it’s surfing.  Pretty difficult to explain if you’ve never experienced it so here is a video I found that could best show what I’m talking about!

So. Much. Fun!

The trip took up all day and when we got back to the buses around 5:00 p.m., they had cold beer waiting for us.  Bud Light never tasted so good!

Overall, Brian and I had an absolutely amazing weekend visiting with family and going on all kinds of adventures.  I would highly recommend visiting southern West Virginia to experience some of these activities yourself!

Zippin’ through West Virginia

Well, it’s safe to say that Brian and I had an amazing vacation this past weekend.

We left bright and early Friday morning and made the 7 hour journey to our first stop – Ravenswood, W.V.  Ravenswood is just over the Ohio/West Virginia border (the Ohio River separates the two) and surprisingly, the road trip went by really fast.  We made a few pit stops along the way for a beer or two and packed some interesting snacks to keep our bellies full:

Have you had this before?  I can’t say I like it, but I can’t say that I don’t.  Freeze dried food is weird.  I feel like I’m on a space ship or something.

We arrived at my cousin Leah’s around 4:00 p.m. ET and got a grand tour of their estate.  Yes, I said estate.  They have a gorgeous house that sits on top a very large hill with acres of forest and open space.  To get up to their house is an accomplishment in itself.  Think very narrow winding roads and lots of gravel!

We lounged around for a while, recovering from our long journey and enjoyed a delicious home cooked meal before heading out and exploring their town.  Small towns are so cute and quaint and really put a lot into perspective when you come from a big city like Chicago.

Everything was so peaceful, beautiful and quiet.

The rest of the evening was spent relaxing and eating some more before heading out the next morning to complete our journey to Oak Hill, W.V.  My aunt and uncle live in Oak Hill and when we arrived Saturday afternoon, we were able to witness the end of their annual town parade.  People were lined up along to streets to get a glimpse of the high school band and Ms. Oak Hill.  My aunts best friend, Marilyn, has a house right in the downtown area where we were able to enjoy some snacks and beer as the parade passed on by.  Whenever I watch parades that have High School Cheerleading Squads and Pageant Queens, Taylor Swift songs always start popping in my head.  I’m weird.

Once the parade was over, we quickly headed to their house to drop off our stuff and get ready for our big zip line excursion.  My aunt and uncle were generous enough to book two adventures for Brian and I when we were in town: Zip Lining and White Water Rafting.

I had never zip lined before, so needless to say, I was pretty pumped!  The canopy tour was through a company called Adventures on Gorge, whom also guided our white water trip.  They are basically the Walmart of adventures in West Virginia… a one stop shop for anything you want to do.

The first part of the zip lining adventure was learning about our gear and what to do on the zip line.

Once we all passed our tests, kidding…there were no tests, we headed into the forest!

The tour consisted of 10 zip lines which varied in length between 100 – 730 feet.  According to our guide, we reached up to 35 miles per hour on some of the zip lines and although in my head I thought that was kind of slow, when you are zipping past trees and over rivers it becomes a lot faster than you think!

The trip also consisted of walking over a couple creaky sky bridges and hiking to gain elevation on our trip.

We learned a lot about the forest in West Virginia and how the community is trying to protect their beloved Hemlock trees from the Japanese parasites that have invaded the area.  Our tour guides, Lauren and Jake, had names for each of the Hemlock trees and showed us how they inject the insecticide they are using to help protect the 800 year old trees.

Lauren and Jake also had other ‘words of wisdom’ along our trip like “If you see a moving stick… it’s not a stick.”  🙂

Bottom line.  It was awesome and you should do it.  Next time Brian and I visit, we are going to do their Gravity tour… which is another zip line adventure where you reach up to 60 mph!

After our tour, it was time for food and beer!

Everytime I visit my family in West Virginia, a trip to my Uncle’s restaurant is always a must (former-owned restaurant… he is now retired and living the dream).

I ordered the local trout and it was just as good as I remembered.  Some things never change 🙂

Take me home country roads…

Well, Brian and I are driving down the highway now on our much anticipated road trip to wild and wonderful West Virginia!

As I’ve been telling my friends and coworkers about this trip, a lot of folks have been asking… why West Virginia?

A lot of my family lives or has lived in the beautiful state, so it holds an extra special place in my heart.  You see, my great great grandfather (I think that’s how it works… my grandpa’s grandfather), Caesar Barbera, immigrated to this wonderful country from Italy and went to work in the Coalfields of West Virginia in 1900.  According to my late grandfather, George Barbera, “When he landed on Ellis Island, he was asked if he wanted a job. He said, ‘yes.’ He hopped a train and came to Thurmond. He had to walk to Glen Jean where the coal company gave him a job loading coal.”

My family has been rooted in West Virgina for a long time and in a way I still feel very rooted there as well.

I used to visit my family down is southern W.V. at least twice a year.  All of my first cousins, except two, lived there… Here’s us taking a really awesome photo.

We were/are all a tight knight group.  For almost as long as I can remember my grandpa and grandma were the rock and foundation of our little clan.

After their passing, it always felt a little strange to be going back without them there.

Now time has gone, and it’s been almost 3 years since I’ve had a proper visit… so I’m incredibly excited to visit the place that has given my so many wonderful memories.  I’ll be staying with my cousin Leah and her family tonight who live on the Ohio/West Virginia border.  Tomorrow, we will be packing up again and making the trip down to gorgeous southern West Virgina to stay with my Aunt Connie and Uncle Ron.

photo 5(1)I’m sure we will be visiting all the old favorites like the restaurant my Uncle used to own, Dirty Ernie’s Rib Pit.

Brian and I are being treated to a white water rafting trip and zip lining in the canopy which will be awesome!  What I’m looking forward to the most, however, is just spending time with the family… reminiscing about the good times and the great times to come 🙂  Have a wonderful Labor Day weekend, y’all!

Memorial Day Weekend Pt. 2

After running the Soldier Field 10 Miler on Saturday, Brian and I were busy busy busy. We enjoyed our complementary beers in the finishers area and then immediately headed out for Brunch with the other Lindsay and Brian.  Schubas is this great little bar/restaurant close to our apartment which was perfect because we did not have too much time to spare. By this point in the day I was starving and immediately ordered a prosciutto and egg sandwich accompanied by a couple mimosas 🙂

After brunch, we headed home to shower and get ready for the afternoons events:

1. My sisters graduation party at my parents house
2. My best friends birthday party at the Arlington Race Track

If I have not mentioned it before on this blog, I grew up in Arlington Heights, Illinois which is about 45 minutes northwest of Chicago. It’s a pretty large suburb that has really developed into a hot spot for dining since I left after high school. Another major attraction that competes with the local dining scene is the Arlington Race Track.

Once we arrived at my parent house, we said hello to the relatives, dropped off Bailey and then immediately headed to the track to spend some time with my friend for her birthday. The track was PACKED with people celebrating the Memorial Day holiday and everyone was in their best derby gear. It’s funny, my friends and I would go to the track all the time growing up in just regular clothes – shorts and a tank. Now, you wouldn’t be caught dead wearing anything less than a maxi dress, wedges and a floppy hat. Girls.

The visit was very short lived as we needed to head back home to get the graduation party started! I had a lot of relatives from all over the country fly in to help celebrate and there was a great turnout of our family friends as well.

On the menu for the party:

Italian beef (it’s no Chicago grad party without this staple)
Pizza
Pulled chicken sandwiches
Lots and lots of various sides

One of my favorite items of the evening was this Kale salad mix that my mom picked up from Costco that everyone at the party went nuts over. I love Costco!

The party was a great success and went out until the wee hours of the night.

Sunday morning we took our time to sleep in and enjoy the beautiful weather outside before heading back to Chicago for a BBQ at a friends house.

I decided to make my Zesty Broccoli Salad to contribute to the party and I’m glad I did because it was one of the only ‘green’ items at the BBQ 🙂  Not that anyone really complained about that fact or anything… haha.

To say we are very fortunate to be surrounded by such amazing family and friends is a huge understatement.  The weekend was full of so many fun activities that by the time Monday came around both Bailey and I needed some good ol’ rest.

Spicy Tex-Mex Soup

It’s going to be over 70 degrees here in Chicago today!  Can you believe it?  I’m just as sick about everyone talking about the weather as the next person is, but I have to say that we NEED this sunshine.

The past two days have been busy busy busy in preparation for my trip tomorrow.  Brian, my family and I are flying to North Carolina Thursday afternoon for my little sisters college graduation.  Crazy.  We are almost exactly four years apart and her graduation means that I have officially been out of college for four whole years.  I cannot believe she is a real-world adult now!  I swear she was four years old just the other day…

Adorbs.

Since this week has been so hectic, I tried to plan meals that would be quick and easy to make.  Since Monday was Cinco de Mayo, I wanted to be able to whip up something quick, healthy and delicious.  After doing some research online and getting some great ideas, I came up with this awesome soup:

Spicy Tex-Mex Soup

Serves: 4

Ingredients: 

  • 1 tbs. extra virgin olive oil
  • 1 red bell pepper, diced
  • 1 white onion, diced
  • 1 jalapeno, diced and seeded (keep some seeds if you like lots of spice!)
  • 1 lb. shredded cooked chicken breast
  • 2 garlic cloves
  • 1 1/2 cup frozen corn
  • 1 can black beans, drained and rinsed (14.5 oz)
  • 1 can fire roasted tomatoes (14.5 oz)
  • 1 small can green chilies (4 oz)
  • 2 tsp. crushed red pepper flakes
  • 1 tsp. ground cumin
  • 4 cups low sodium chicken broth
  • Salt and pepper to taste

Toppings:

  • Lime
  • Avocado
  • Cilantro
  • Queso Fresco

Directions:

  1. Heat a large soup pot over medium high heat, add olive, onion, bell pepper and jalapeno and saute for 4 minutes
  2. Add garlic, cumin, salt, pepper and red pepper flakes.  Saute until fragrant.
  3. Add corn, black beans and chicken.  Saute for 2 minutes
  4. Add Chicken broth, roasted tomatoes and green chilies.  Bring to a boil
  5. Simmer for 20 minutes, serve and enjoy!

I topped mine with some fresh lime juice and avocado and it was superb!

Another easy meal for the week was just some good ol’ grilled burgers.  With the weather changing I am craving all kinds of BBQ.

I topped my organic beef patty with some mustard, ketchup, lettuce, tomato and sliced pepperoncini peppers.

Delish! I’m so pumped for summer produce, I can barely control my excitement.

Snapshots: Easter Weekend

We had quite the eventful Easter weekend! …Even though I thought it was going to be a low key one.

Saturday morning I was up bright and early to meet Lindsay for our half marathon training run.  We originally had a 10k on our calendars, however, we decided to just maintain our endurance level and shoot for another 8 mile run.  I met Lindsay at her place and decided to DIVVY my way up there.  If you are not from Chicago, DIVVY is our bike share program throughout the city.  It is super convenient and easy to use.  There is a DIVVY station about a block away from my apartment and one right in front of Lindsay’s doorstep.

It was a beautiful, beautiful day, so we decided to stick to the Lakeshore path to take in all of the amazing views.

We passed the Lincoln Park Zoo where we were tempted to join in the free Easter egg hunt and play with the monkeys and zebras.

Before we knew it we were up back towards Wrigley which lead our run to conveniently end right by an Einstein Bagels – win!

Lately, my post run cravings have included bagels and lemonade.  When I went to go get my lemonade at Einsteins, the Lemonade dispenser must of been running on it’s last leg because I got a really nasty, watery tasting lemonade.

The rest of Saturday was spent cleaning and prepping for our Easter celebration.

My parents got down into the city super early on Sunday to save some seats at the Easter mass we went to.  I had no problem heading over to the church early in part because it was GORGEOUS outside, but also I wanted to watch the little kids do their post mass Easter egg hunt.  So cute.

After mass, we headed back to my apartment to finish the prep of dinner.  My parents were in charge of the appetizer and brought over this amazing goat cheese and roasted pepper dish as well as some cute Easter treats.  Shout out to my cousins in Ohio for sending us an awesome Edible Arrangement!  Once Brian’s family arrived it was time to pop the champagne, open a few bottles of wine and get to dining!

Can we talk about how awesome these cream puffs/swans were that Brian’s cousin Diane brought?  Almost too pretty to eat… almost 😉

I am so so so so full and happy that we were able to celebrate with friends and family this weekend.  Brian and I had an amazing time hosting Easter dinner and can’t wait to dig into all of the leftovers!

Hilton Head Recap: Food

It’s no secret that I have a weird obsession with all things food related – I’m gonna go out on a limb here and say that most bloggers do.  However, this past week at Hilton Head was awesome in part because I didn’t have to worry about cooking for myself for seven whole days.  Plus, my mom and dad made most of the reservations which meant I was in a total state of RELAXATION. Here is the recap of the week and my recommendations for some dinner/lunch hot spots.

Saturday: Uhhhh we got in at midnight sooooo I had a few bites of mom’s leftover sushi and then hit the hay.

Sunday: Skull Creek Boathouse

Skull Creek Boathouse is a great family-friendly restaurant on the island that is perfect for al fresco dining and an amazing view of the sunset.  This restaurant is one of the more popular ones on the island and there is always SUCH a long wait.  I’m not sure how it happened, but we were lucky enough to snag a tall-boy table by the bar outside without having to put our name on the waiting list.  Noteworthy – don’t wait for resos – grab a seat at the bar – it is always a good time.

For the table we ended up splitting an order of the hushpuppies which were so delicious.  For my main course, I opted for the peel n’ eat local shrimp – for obvious reasons.  It’s funny, on the menu they had peel n’ eat shrimp and then shrimp that were already peeled for like $5 more… are people that afraid of peeling shrimp.  C’mon.

Monday: Low Country Boil – The only meal I cooked all week!

This is an awesome recipe I will have to share with you later, but it was super simple.  I basically threw some fresh jumbo shrimp, corn, turkey kielbasa (for us heart healthy folk) and red potatoes in a pot of boiling water with old bay and lemons.

It was super yum and you best believe we ate the whole damn thing.

Tuesday: The Black Marlin

Another really popular restaurant on the island, however, we did not go out until 8:00 p.m. so we beat all of the family rush 😉  The Black Marlin has a really awesome patio that overlooks the bay.  My mom and I weren’t super hungry, so we just ended up ordering a bunch of appetizers: Sushi Nachos (oh, yes), Crab Cakes and my favorite… fresh oysters.

Wednesday: Sunset Grill

This restaurant is not as well known so… shhhhhh.  Don’t ruin it! 😉  It’s tucked away behind a trailer park on top of a laundry store.  Despite it’s appearances, it is THE BEST restaurant i’ve been to on the island.  The atmosphere is small and intimate with just enough glamour to make it feel like a special occasion.  PLUS, it has the best view of a sunset on the island (hence the name).

To top it off as my “dessert” I ordered a 1664 Blanc which is a beer that I drank all the time when I studied abroad in Paris, France.

I’ve been raised by excellent cooks in the family, it’s not wonder my obsession with food has gotten so out of hand 😉

Friday: The last supper – Harold’s Diner  – plus copious amounts of mimosas!

For lunch, Brian and I biked to our favorite local diner that has the BEST grouper sandwich – with a side of attitude!

We order grouper sandwiches from this diner every time we are on the island and they never disappoint.  They also have phenomenal looking burgers, cheesesteaks and breakfast food galore.  Seriously, THIS is what diner food is all about.  Fresh, local and unforgettable.

As you can see, the daily activity was much needed in order to ‘balance’ out my daily eats.  The food on the island is so fresh and delicious, if you don’t like seafood… we probably can’t be friends.  KIDDING… or am I?

Hilton Head Recap: Activities

Good morning, friends!

I’m back in Chicago from my week long vacation at Hilton Head Island.  It was an absolutely amazing trip and I can’t wait to share my recaps with you – Activities & Food.

There are different types of vacationers… those who like to take tours and have their days planned out for them hour-by-hour, those who just like to relax and see where the day takes them and those who are a mixture of both.  I tend to be the kind that takes the day as it comes, but one thing I do like to plan out are my weekly workouts/activities.  For me, vacation is not an excuse to skip the exercise, it is a chance to embrace it – especially when you are going somewhere with great weather!  Here was the breakdown of my week:

Sunday: Walking on the beach

Monday: 2 Mile run & strength

Tuesday: Vaca 5k (yes, this was an actual thing)

Wednesday: Yoga in the a.m. – Tennis with Dad in the p.m.

Thursday: 3.5 mile run

Friday: Tennis with Dad & Biking

As I mentioned in my last post, my family stayed at the Marriott Surf Watch resort on the island.  I am totally biased towards Marriott resorts/hotels.  The customer service is amazing, the amenities are great, the beds are to die for and they always have a ton of great activities scheduled for the week.

Each day, the staff at Surf Watch had a list of fitness related activities you could participate in as well as social activities.  The two fitness activities I participated in were the Vaca 5k with my dad and the Yoga with my mom.

Both were great and the staff that lead the events were so friendly and enthusiastic.  My mom was a big fan of all of the water aerobics and water strength classes – she took a class every morning – way to go, mom 😉

Some of the more social activities we went to were Brats, Brews and Bonfires – Craft Beer tastings and grilled brats and the daily happy hours at the Sea Salts Bar by the beach – obviously.

Besides the events Marriott had available to us, the island is full of all sorts of great activities.  There are tennis courts on every corner, lots and lots of bike and running paths, golf courses galore, paddle boarding and so much more.  Any of these activities are a great way to get in some daily exercise 🙂

For me, it is really essential that I plan these in advance so that I am more motivated to do them.  Also, if you are on vacation with family or friends, it is great to get them involved as well.  Workout buddies are the best!  Ta Ta for now!

 

My Health – Mind, Body & Spirit

When people generally proclaim they want to become healthier, most automatically think of fitness and nutrition.  There are so many factors that go into being ‘healthy’ that it is interesting to sit down and review day-by-day what you do to achieve this goal.  For me, nutrition and fitness are major factor in my healthiness, but so is my mental well being, my relationships and my spirit.  Now i’m not about to get all spiritual with you, but I would like to share some of the things that I do daily to try and improve my health as well as things I need to work on.

Things I already do… (sans fitness and nutrition)

Treat myself to massages

This can definitely become an expensive habit, but I only schedule them two or three times a year.  Some of the nicer gyms in my area have spa’s that are actually really affordable and have excellent service.  At my company, we try to schedule free 15 minute massages for our employees during stressful times of the year like our software regression testing.

Books, blogs, magazine articles, you name it.  I love making a french press early on a Saturday morning, chilling with Bailey on the couch and reading.  Growing up, the t.v. was never on before noon on the weekends, not because it was forbidden, but because my parents really loved enjoying the mornings.

Turn off the lights and listen to music

I found this especially relaxing when I had roommates.  Just make sure to set an alarm or something because you may or may not fall asleep 🙂

Take long hot showers

I won’t post a picture of this one 😉

This is not necessarily good for the environment, but it is good for the soul from time to time.  I’m not really a bath person, but if you are I’m sure the same would work here.

Take Bailey for walks

This goes along the lines of exercise, but I LOVE LOVE LOVE the location of my apartment right next to the lake.  It’s something that would be really hard for me to give up.  Taking Bailey on walks on early summer mornings when the sun is just rising over the lake with light pink touches – love.  You will never find me living in the Wicker Park/Bucktown area for this sole reason.  What path would I run on?! 😉

I would guess about 99% of us are guilty of this.  Checking phones during dinner, WHILE watching t.v., or while we lay in bed.  I used to sleep with my phone in my bed.  Now I leave it in another room so I am not tempted to check it before I go to bed or right when I wake up.  I’m leaving for Hilton Head Island tomorrow and am going to try and ‘disconnect’ as much as possible – especially from work.  But you will still see a few blog posts from me!

Meditation

Sitting in a room for an extended period of time totally quiet and focused is really hard for me, but definitely something I want to get better at.

Focusing on one thing

I tend to have brain A.D.D. sometimes.  I’ll start cleaning the kitchen and then I’ll remember that I have to to a laundry and then I’ll remember that I need to email my mom.  The list can go on, but this would definitely become a lot easier if I could also master the whole meditation thing.

Getting up earlier so I don’t rush out the door for work

Waiting until the last minute to get into the shower is my forte.  Unless, I workout in the morning.  Which will become a lot easier when it is above 30 degrees outside and not so dark and scary!

Volunteering

Although I do participate in my BvB: Tackling Alzheimer’s Fundraiser each year, I really want to make a commitment to reach out to my community more in 2014.  Helping other people is a great sense of self-worth and self-esteem.

The point of this is a lot of us, especially women, forget to prioritize our ‘self care’ – whatever that may be.  We either put work, or our kids, or our busy schedules first and don’t take time to stop and enjoy ourselves.  It is so very important to do this not only to feel good on the inside, but to radiate a sense of confidence.  I encourage each and every one of your to make a list like mine and see what you can do to improve your mental, physical and spiritual health.

Dinner Booze Dinner

Good Morning, Good Morning!

It’s 48 degrees out right now!  This may be something crazy to be excited over, but it feels like heaven compared to the bitter cold we’ve been experiencing these past few days.

Yesterday after work, I met Brian at our local Binny’s so that we could stock up on some booze for the winter.  If you are a Binny’s fan like me, you should know that they are having some ridiculously awesome sales right now when you use your Binny’s card.  Needless to say, we went a little crazy.

If you can’t tell we are big fans of the Hendricks.  Also, we stocked up on some of our mixers including the various San Pellegrino flavors.  These are so delicious to mix with tequila!

Brian and I are having a couple friends over for dinner this weekend so we wanted to make sure there were good choices for whatever people’s tastes are.  After we put everything away, we went over the menu so that I can prep for a big grocery trip after work today.  What are we making?  I’ll tell yah!

Appetizers:

-Good stinky cheese

-Fresh torn baguette

-Herbed Shrimp

-Salad with arugula and pomegranate arils

Main:

-Coq Au Vin with herbed noodles

-More fresh torn baguette to soak up the delicious juices

Dessert:

-Homemade chocolate mousse with fresh berries

You may or may not have detected a bit of a theme, I was really trying to bring my Paris memories back to life.

This dinner is the first of many festive dinners to come.  Remember that life is all about balance and doing what you love.  I love to eat and I love to drink, so to counter this passion I will definitely be hitting up the gym early in the morning!  I still need to figure out what kind of ‘side’ I will be bringing to my parents Thanksgiving dinner.  Last year, I brought Ina Garten’s Roasted Butternut Squash Salad with Warm Cider Vinaigrette and it was a major hit.  Honestly, Thanksgiving is not my favorite meal of the year.  I LOVE LOVE LOVE fresh turkey – especially my dad’s smoked turkey – but the ‘traditional’ sides are kinda unappetizing to me.  Why would someone make a green bean casserole when you can have fresh crisp green beans with drizzled olive oil, lemon juice and crumbled goat cheese one top.  Doesn’t that sound better, or is it just me?

I know, it’s just me.  My stomach doesn’t do well with cream, milk or a lot of butter – which pretty much everything Thanksgiving side dish has… hence why Thanksgiving is not my favorite holiday.  I do, however, enjoy leftover turkey sandwiches, watching massive amounts of football and the Macy’s Thanksgiving Parade!

Back to my original thought, any suggestions on a delicious fresh side that does not involve lots of cream, milk or butter?!  Yesterday I checked out Kath’s recent post over at Kath Eats Real Food and thought that her Ultimate Fall Wheatberry Salad might be a winner.  Here is the tricky part though… my dad doesn’t like fruit.  Ha!  Back to the drawing board…
