White Water Rafting the Lower New

On to part 2 of my West Virginia adventure!

Sunday was a rainy day, so we decided to spend a lot of time driving around town visiting relatives and seeing some of the more ‘historical’ parts of the area.  We drove up to the exhibition coal mine in Beckley, but just missed a tour that had started 20 minutes before we arrived.  It was interesting to look at the buildings that were preserved around the mine compound.  There was a school, several preserved houses, a church and an outhouse or two 🙂  It was a good representation of early 20th century coal camp life.  Something my aunt and uncle told me that I found rather interesting was that single men and men who were married had completely different houses.  Married men had houses that featured 2 or 3 bedrooms with 1 bathroom, while unmarried men basically lived in a glorified closet.  Guess it paid off to be married back then!

For lunch, we stopped at one of my favorite places to eat in Fayetteville, Cathedral Cafe.  The cafe is actually inside an old cathedral and has some of the original decor and stained glass still inside.

It’s cute and quaint and a lot of the produce and meat is local and sustainable.  I wasn’t too hungry when we got there so I opted to order a side salad and some of their homemade hummus with pita.  Both were delicious!

We took it easy Sunday evening because we had to be up bright and early Monday for our rafting trip!

Our trip kicked off around 10:00 a.m.and we were greeted by the river with a gorgeous view.

The New River Gorge is a popular trip in West Virginia that is divided up into two sections – the Upper New and the Lower New.  The Upper New is good for families and people who may be a little too timid to go down big rapids, while the Lower New River is the real white water rafting with class IV-V rapids.

We opted for the Lower New, of course 🙂

Brian and I were in an 8 person raft, not including our awesome guide Andy McFly, and everyone who was with us seemed to be around our age, relatively young and athletic.  This is always a good sign because if you have good people in your raft, your guide is more likely to take you down the ‘fun’ routes on the rapids.

The trip was awesome.  We got wet… we got wild… and had an amazing time.

About halfway down the Lower we pit stopped for lunch on a beach off the river and ate some deli sandwiches, fruit, chips and such.  You don’t realize how much of your body you are using when going down the rapids, so once we stopped I realized just HOW HUNGRY I was.

There were sections on the river where our guides let us do really fun stuff.  We got to purposely jump out of the raft along and swim in the currents.  There were a couple class II rapids that they let us go down with our own bodies (instead of in the rafts).  That was a blast, although I did get a fare share of water up my nose!  We stopped on the sides to jump off large rocks into the water and even got to go “surfing”, which is basically turning your raft around into the current and finding that sweet spot pocket of air that allows the raft to feel like it’s surfing.  Pretty difficult to explain if you’ve never experienced it so here is a video I found that could best show what I’m talking about!

So. Much. Fun!

The trip took up all day and when we got back to the buses around 5:00 p.m., they had cold beer waiting for us.  Bud Light never tasted so good!

Overall, Brian and I had an absolutely amazing weekend visiting with family and going on all kinds of adventures.  I would highly recommend visiting southern West Virginia to experience some of these activities yourself!

Hilton Head Recap: Food

It’s no secret that I have a weird obsession with all things food related – I’m gonna go out on a limb here and say that most bloggers do.  However, this past week at Hilton Head was awesome in part because I didn’t have to worry about cooking for myself for seven whole days.  Plus, my mom and dad made most of the reservations which meant I was in a total state of RELAXATION. Here is the recap of the week and my recommendations for some dinner/lunch hot spots.

Saturday: Uhhhh we got in at midnight sooooo I had a few bites of mom’s leftover sushi and then hit the hay.

Sunday: Skull Creek Boathouse

Skull Creek Boathouse is a great family-friendly restaurant on the island that is perfect for al fresco dining and an amazing view of the sunset.  This restaurant is one of the more popular ones on the island and there is always SUCH a long wait.  I’m not sure how it happened, but we were lucky enough to snag a tall-boy table by the bar outside without having to put our name on the waiting list.  Noteworthy – don’t wait for resos – grab a seat at the bar – it is always a good time.

For the table we ended up splitting an order of the hushpuppies which were so delicious.  For my main course, I opted for the peel n’ eat local shrimp – for obvious reasons.  It’s funny, on the menu they had peel n’ eat shrimp and then shrimp that were already peeled for like $5 more… are people that afraid of peeling shrimp.  C’mon.

Monday: Low Country Boil – The only meal I cooked all week!

This is an awesome recipe I will have to share with you later, but it was super simple.  I basically threw some fresh jumbo shrimp, corn, turkey kielbasa (for us heart healthy folk) and red potatoes in a pot of boiling water with old bay and lemons.

It was super yum and you best believe we ate the whole damn thing.

Tuesday: The Black Marlin

Another really popular restaurant on the island, however, we did not go out until 8:00 p.m. so we beat all of the family rush 😉  The Black Marlin has a really awesome patio that overlooks the bay.  My mom and I weren’t super hungry, so we just ended up ordering a bunch of appetizers: Sushi Nachos (oh, yes), Crab Cakes and my favorite… fresh oysters.

Wednesday: Sunset Grill

This restaurant is not as well known so… shhhhhh.  Don’t ruin it! 😉  It’s tucked away behind a trailer park on top of a laundry store.  Despite it’s appearances, it is THE BEST restaurant i’ve been to on the island.  The atmosphere is small and intimate with just enough glamour to make it feel like a special occasion.  PLUS, it has the best view of a sunset on the island (hence the name).

To top it off as my “dessert” I ordered a 1664 Blanc which is a beer that I drank all the time when I studied abroad in Paris, France.

I’ve been raised by excellent cooks in the family, it’s not wonder my obsession with food has gotten so out of hand 😉

Friday: The last supper – Harold’s Diner  – plus copious amounts of mimosas!

For lunch, Brian and I biked to our favorite local diner that has the BEST grouper sandwich – with a side of attitude!

We order grouper sandwiches from this diner every time we are on the island and they never disappoint.  They also have phenomenal looking burgers, cheesesteaks and breakfast food galore.  Seriously, THIS is what diner food is all about.  Fresh, local and unforgettable.

As you can see, the daily activity was much needed in order to ‘balance’ out my daily eats.  The food on the island is so fresh and delicious, if you don’t like seafood… we probably can’t be friends.  KIDDING… or am I?

Welp, that’s it folks.  My Hilton Head Recap is complete which means vacation is officially over. 😦  Until we meet again.

I’m Back!

Guys, I’m back – I know you missed me.

Things have been crazy around here between Open Enrollment with work and holiday festivities, I decided to take a bit of a media cleanse.  Instead of waking up – going to work – gym – dinner – blogging – bed.  My days looked more like waking up – gym – going to work – glass of wine – enjoying time off – bed.

I really needed that extra hour or two I would normally spend blogging each night to just unwind after a crazy day.  I am happy to report that I am back feeling fully rested and excited to share some of my recent happenings and future endeavors.

Food Wise

I’ve been enjoying my usual delicious meals and happened to snag a few photo bites while on my “cleanse”.

It was actually my first time dining at Xoco, I have been to Rick Bayless’s Frontera and Topolobampo, but never the smaller more affordable place (makes sense, not..)  I was extremely impressed with the level of service at Xoco even though it was not his flagship restaurant.  I ordered the short rib soup in a red chile broth that came to the table without the short rib the first time around.  The manager of the restaurant immediately came over and apologized and explained that this is not the standard they try to maintain at.  He then offered dessert and coffee on the house and how could we resist?  Along with the churros he delivered sample sizes of their famous Mexican hot chocolate and oh my it was to die for.

Workout Wise

I’ve still been working out everyday – there’s not cleanse from that.  My gym is starting to become more and more crowded as the cold creeps in so my early morning workouts are now a must.

A lot of treadmill runs have been completed and the Nike Training Club App is still a favorite.  I am running a Turkey Trot next week on Thanksgiving Day and checked the weather today to see what is in store – a high of 35 degrees.  Looks like I may need to do a couple outside practice runs so that my lungs can get used to the cold weather.

Fun Wise

… but not until after the severe weather delay.  As many of you know, there were several severe tornado outbreaks in the central part of Illinois that caused a lot of damage and took a heavy toll on some of the local communities.  The storm was not that bad out where I was in Chicago, in fact, after it had passed we went outside and only a few branches had fallen from the trees.

We were fortunate.  For a while the weatherman predicted that Chicago would end up being in the tornado’s path, but it shifted at the last minute.

On another note, can you guys believe that next week is Thanksgiving?  I’m super pumped mainly because I love to eat, but also because my sister will be in town as well as some of my other relatives, it’s BRIAN’S BIRTHDAY on blackout Wednesday and my best friend, Stacey’s birthday on Black Friday.  So much celebrating ahead of me!

Sushi & Workout Apps

Good Morrrrrning!

Last night I had the best sushi I have had in Chicago.  Two of my coworkers and I decided to grab dinner and drinks after work and one of my coworkers raved about this sushi place in her neighborhood that was amazing and BONUS – BYOB.

The place? Kai Zan.

After walking in I immediately could tell that this would be a different experience than your typical BYOB sushi place.  The decor inside modern and unique, the staff was friendly, attentive and extremely knowledgeable about the menu and ingredients listed.

Since my friend had already been there she knew some of the items that were a must try.

The menu was not too large which I loved and featured a lot of unique non-roll items to order.

But just as my friend said, the ‘Angry Crab’ stole the show.  Fresh tuna, spicy crab w/ chef’s togarashi.

Once this delicacy entered my mouth it practically melted as this cool, creamy, delectable morsel.  By far the best thing I have ever tasted.  We joked that these could be served at our ‘last meal’, but I’m not sure any of us were really joking.

All of the other items we ordered we also fresh and very good:

Edamame – standard

Flaming Tuna Roll – shrimp tempura, spicy tuna & avocado with seared tuna

Escolar Pearls – rice spheres topped with scallion and super white tuna soaked in soy sauce, truffle oil, spicy mayo and chili oil.  Then lightly seared.

We also couldn’t help finishing off our meal with a couple more orders of the Angry Crab.  SO GOOD.

Switching gears…
Have any of you started using or have heard of the Nike Training Club App? It is my new best friend.

It’s my favorite at-home or in the gym workout companion.  You can choose which workouts you feel like doing – Lean? Toned? Strong? Focused?  And inside these various categories are different workouts based one three levels: Beginner, Intermediate and Advanced.  The app also tells you how long each workout will take and my favorite 30 minute workout right now is the ‘Curve Carver’.  I usually do the Intermediate level, but have also done the advanced as well and it is a GOOD WORKOUT.

What I really love about the app is that it takes time to have you warm up/stretch and cool down so it isn’t promoting anything that could cause injury.  In the ‘Curve Carver’ workout I have to do 30 seconds of froggers which is so much fun, but Bailey looks at me like i’m crazy.

I highly recommend you try this app out… IT’S FREE!

A Marathon of a Weekend

Let me tell you about this fabulous weekend I just had.

Friday – One of my best friends, Kaitlin, and I went grocery shopping right after work in preparation for the festivities that were to occur on Saturday.  She was hosting “brunch” for our other best friend’s, Cassie, birthday and about 12 people were going to be coming over hungry and thirsty Saturday morning.  We perused the aisles and decided on this rockin’ spread:

The spread was a hit!  I cannot take any credit for the Pumpkin Bread/Blueberry muffins – that was all Kaitlin’s doing.

Saturday morning I snuck in a quick 4 mile running before heading back over to Kait’s where we all drank/ate/talked until it was time to head over to Revolution Production Brewery for a private tour.  Cassie’s boyfriend had set up the tour and when we arrived we each received a full pour of their most popular Anti-Hero brew.  The tour took about 45 minutes and was jam packed with awesome facts about the history of revolution and all that goes in to producing their beer.  Our tour-guide, Jonathan, was awesome.

After the tour was over, we stayed at their tap room for a while longer and sipped on some more beers and enjoyed our surroundings.

Next thing we knew – it was 5:00 p.m. and Brian and I needed to head back home to let Bailey out.  This was also a perfect excuse to go home and squeeze in a nap before round 2 of the festivities began.

Around 8:30 p.m., we all headed to Sapori Trattoria in Lincoln Park for dinner.  The restaurant was packed with all the marathoners, but we had a table waiting for us in their upstairs venue.  I was thoroughly impressed with the service at Sapori.  Even though they were jam packed, our server was very attentive to our needs and they even customized the dinner menu’s to say ‘Happy Birthday, Cassie’ on them!  Adorable.

Plus, it was BYOB!  We were happy.

To start, Brian and I split the grilled calamari with balsamic drizzle which was fabulous!  For my main entrée, I ordered the homemade linguine with clams in a garlic white wine sauce.  I wish I could have snagged a picture, but A. I was so hungry I started eating right away and B. The lighting was too dark for any good pictures.  Let me just say that homemade pasta is the best and a real differentiator when it comes to good Italian restaurants in the city.  I was very pleased.

After dinner, we all headed over to the Hotel Lincoln to enjoy a few drinks at the J. Parker.  It was the perfect night cap to the day, although, I did manage to make it out to one more bar that night to meet up with friends.  What can I say, that nap really energized me!

Needless to say, with all the eating, drinking and partying that occurred on Saturday… I was feelin’ a little rough Sunday morning.

Since I woke up bright and early to let Bailey out, I decided to hurry over to Sheridan road to catch the elite runners kick off the Chicago Marathon.  It was truly amazing watching them run by… they make it look so easy and effortless.

The location of Brian and I’s apartment is unique for the Chicago Marathon because we are literally boxed in by runners running north on Sheridan and then back south down Broadway.  I personally love it because watching the marathon runners makes me so so happy 🙂

The rest of our Sunday was spent relaxing and watching football.  I did manage to get off the couch to make Sunday dinner:

For those of you who have asked, I used Iowa Girl Eat’s recipe for Honey Jalapeno Cornbread (yes, oh yes, I BAKED!) and my mother’s recipe for chili.  It was a killer combo 🙂

Le Colonial & Your Weekend Challenge

Good Morning and TGIF.

Last night was our September ‘Dining Club’ and we picked a good one – Le Colonial in the Gold Coast.  Our reservations were not until 7:15 p.m., so after work we headed over to the Cedar Hotel to enjoy a couple beers before ‘classing it up’ at Le Colonial.

I say ‘classing it up’ because Le Colonial was legitimately one of the most beautiful and nicest restaurants I have been to in a while.

Le Colonial is an upscale French-Vietnamese restaurant with lots of delicious dishes to choose from.  The group ordered a lot of different appetizers/main courses to try and pass around.  There was one dish in particular that I was really in the mood for…

Pho.

Their Pho consisted of an oxtail broth with rice noodles, beef tenderloin and aromatic herbs.  It hit the spot and I had no trouble finishing the entire bowl myself.

After a couple cocktails, a few of us got on the topic of running and how tons of people in Chicago are training for the upcoming marathon.  My friend Lindsay and I discussed how hard it has been for us to get back into long runs after our half-marathon training had ended.  Although it can be discouraging, I feel a lot of runners experience the same thing.  The ‘training’ withdrawals.  Sure, training for an 8k or 10k will get your mileage up to 5 or 6 miles, but nothing compared to the 9 or 10 miles we were experiencing before.

The fact of the matter is that it is okay to rest up and recover after marathon training.  Although it will be a bit more of a challenge to get back into long distance running once you’ve stopped for a while – don’t we crave that very challenge?  It’s not like it is impossible to ever get to that point again, it just takes hard work and determination – the very same characteristics it takes to MAINTAIN running that amount of mileage.

Long story short.  I’m not worried.  I’m currently satisfied with my “short” 3-4 mile runs and pairing them with awesome cardio circuits like….

Your Weekend Challenge! Duh Duh Duuuhhhhhh!5

Oh yah, you know you want to do it.  I’ve adapted this challenge from an awesome workout I did this past weekend with the Trendy Trainer in Minneapolis.  Some of the workouts are different, but the concept is practically the same.  So here is how it will work:

Find an awesome grassy park or area that you can perform this circuit.  It is supposed to be beautiful in Chicago on Saturday and Sunday – so plan accordingly 🙂

To start – do one set:

Jumping Jacks for 1 minute

Squats for 1 minute

Backward Lunges for 1 minute

Caterpillar Push-Ups for 1 minute

V-Ups for 1 minute

Side Plank for 1 minute

After you complete the first set, take a minute break.  When one minute is up, repeat the set again, but this time perform each task for 45 seconds each. 1 minute break. Complete the final set – 30 seconds per move, but really ramp it up!  Try to get in as many reps per move in the 30 seconds!

You should also note to switch sides for the ‘side plank’ portion and complete a regular full plank during the final set.

I promise that this challenge will rock you socks off and work all different types of muscle groups – abs, gluts, triceps, chest… and so much more!  The key to the challenge is not to burn yourself out during the first set.  Maintain a steady pace throughout the workout and then really ramp up the reps in the final set!

Leave a comment on this post to let me know how you did, and remember that you can always modify some of the moves if it becomes too challenging (ie: take the pus-ups on  your knees or do regular crunches instead of a full v-up).

Food, Friends & Fun – HLS13

Good Morning, Friends!

Last night I had an outdoor soccer game that STARTED at 9:30 p.m.  Needless to say, I was in bed later than normal and feared that it would throw off my whole day today.  To my surprise, I woke up before my alarm clock went off and was wide awake!  I am reinforcing this rarity with lots of coffee, so cheers to a productive Tuesday!

As promised, here is the final recap of the Healthy Living Summit I attended this past weekend in Minneapolis, MN:

Saturday morning started bright and early – 7:30 a.m. to be exact.  Breakfast was served in the mezzanine of the conference room and it. was. awesome.

Check out that spread.  They had everything from fresh fruit platters, bacon, turkey sausage, skillet egg scramble, build your own yogurt bar and lots and lots of COFFEE 🙂  We had about an hour to eat breakfast before the first session of the day started.  It does not usually take me an hour to eat, so I checked out all of the sponsor booths that were outside of the main hall after I finished my plate.  The sponsors this year were amazing.  They were all so friendly and loved hearing about everyone’s blogging stories and health/fitness passion.  My two favorite booths were:

The Blue Diamond Almonds booth.  Look at all those flavors!  The BOLD ‘Salt & Vinegar’ flavor really stole the show for me, but toasted coconut was a close second.

And of course. the Wild Harvest booth.  Wild Harvest had a ‘create your own popcorn’ stand which included lightly salted popcorn that you were able to season with any of their delicious seasonings.

This was the perfect snack to have on hand during the day – no guilt included.

Okay – Okay, enough with the food… let’s talk about the sessions.  I cannot express enough how much I learned this past Saturday.  Some of the sessions I attended included topics such as: ‘Blogs in Transition: Embracing Your Blog’, ‘From Blog to Job: Utilizing Your Personal Blog to Elevate Your Career’, “The Organized Blogger’ and ‘Blogger Self-Care: Staying Happy, Healthy and Sane Under Pressure’.

I loved all of the sessions I attended, but one of my favorites was the ‘Blogger Self-Care’ one where fellow bloggers gave their advice on how to not get stressed out managing work, blogging, reader comments and life in general.  A few of the bloggers talked about taking ‘Social Media’ cleanses every once in a while to refocus.  It’s crazy to think how much social media has taken over our own lives these days.

Facebook, Instagram and Twitter are what I check every morning, one my lunch break, on the way home from work, at home while making dinner, before bed… omg it. is. crazy.  Don’t even get me started on how many other blogs I read throughout the day.  Another great takeaway from the session was ending your week with ‘five happy thoughts’.  If you have had a really rough week personally, professionally or both – take the time at the end of the week to find five things that made you truly happy during the week.  They can be small things like, “I ate healthy 4 out of the 5 work days”, “I tried a new recipe and it was successful” or “I received two awesome blog comments this week.”  Taking the time to focus on the good rather than the bad is a real mental game changer.   I have to keep this in mind when I have real stressful weeks.

The conference ended around 5:00 p.m. with closing comments and an awesome raffle.  I actually WON something in the raffle which never happens.  – A ‘Healthy Living Summit’ charm from ‘Bama + Ry’.

The owner creates awesome copper and nickel jewelry with all different kinds of charms you can add on to a chain.  I’m really happy that I have something I can wear that will remind me of my first HLS.

Once everything was said and done, I headed back to the room and got ready for a night out.  A couple weeks ago I did a whole bunch of research on great restaurants in the Minneapolis/St. Paul area and one in particular kept coming up in my searchers – Butcher & The Boar.  Their menu looked fabulous, so I decided to make reservations there as me and Brian’s ‘splurge’ night.  It was weird not seeing Brian all day since I was at the conference and he was out having fun exploring the city – so the evening felt like an actual date night.

We were seated in a little cozy booth and the decor of the restaurant immediately blew me away.  There were so many items on the menu that looked amazing, so we decided to split everything we ordered.  First up, was an order of the “stuffed jalapenos’, which were stuffed with PEANUT BUTTER and were AMAZING.  Seriously, who came up with this?  We are going to try and recreate this one at home.  For our main entrees, we ordered the Texas Prawns – with a Red Chile BBQ sauce and the 12 oz. prime skirt steak – Rare (because that is the best way) with BBQ sweet onion sauce and cobb salad garnish.

Both dishes were delicious – the prawns especially had a really great spice to them.

After dinner, we roamed around the city for a little bit and grabbed some booze at a nearby liquor store.  We would have roamed around longer, but the rain had steadily started to pick up and neither of us had brought our umbrellas.  Nevertheless, it was a great final night in Minneapolis.

The next morning, B and I opted to sleep in before our long journey home, but I received lots of updates that the location of the next HLS summit was announced – MADISON, WI.  So exciting!  A. It is closer to me 🙂 and B. Madison is an awesome city.

All in all, the weekend was so much more than I expected.  I walked away with a lot of great new friends, ideas and inspiration for the blog and confidence in myself.

HLS13 Recap #1

Why hellloooooooo.

Long time no talk 😉  I’ve been busy busy busy attending the 2013 Healthy Living Summit in Minneapolis!  Since I last posted, I have eaten a lot of food, completed some really great workouts, learned a whole lot about blogging and met a lot of great new friends.  Dare I fit it all in one post?  I don’t think so…

Let’s start with Friday.

Brian and I woke up bright and early – I’m talking 5:00 a.m. to get on the road by 6:00 a.m. so that we would not hit any traffic on our way up to Minneapolis.  The trip west was pretty easy and uneventful…  Bailey loved chillin in the car listening to my sweet playlist and watching all the cows and horses we passed by.

A mere 6.5 hours later, we arrived!

It was an absolutely gorgeous day in Minneapolis, which was perfect because we wanted to explore!  After we dropped our bags off in our hotel room, we headed out to find somewhere to grab a late lunch.  ‘Brits Pub’ was just around the corner and they had a great lunch menu and their patio was dog-friendly – sold.  Happy to be finally out of the car, we ordered a round of beers and Bailey downed a couple shots of water.

I was seriously starving and decided to order the mahi mahi tacos on the appetizer menu per the recommendation of our waitress.

They were da bomb – and huge.  I only managed to finish two of these bad boys, but boy did they hit the spot.  I wanted so badly to order a couple more rounds of beer to wash down my tacos, but I was heading to a “Fit-Mingle” at 4:30 p.m. and made the responsible decision to stick to only one 😉

The Fit-Mingle was the first Healthy Living Summit (HLS) activity I attended!  The title of the class was called ‘Trendy Trainer Cardio Chaos’ and from the title alone I knew it was going to be a great workout.  The class was lead by Caroline, a personal trainer from Boston and author of the blog ‘The Trendy Trainer.’  Since it was so nice out, we walked over to a local park where we completed a High-Intensity Interval Circuit.  The intervals included planks, push-ups, crunches, tricep dips (on a park bench), squats, backward lunges and MEGA BURPEES.  Have you ever heard of mega burpees before, because I had not!  They were awesome/also the devil.  Basically you do the jump/squat three times in a row and then the push-up/kick-out three times in a row.

The workout was awesome and the perfect way to kick off the HLS weekend.

After all that cardio chaos, I headed back to my hotel room to shower and relax before the evening festivities began.  Also, I wanted to check out all of the goodies the HLS planners put in our swag bags.

Seriously, we will have enough snacks to last us for the next couple of months.

Once I was showered and all beautified, Brian and I headed out to dinner.  I made reservations at a Thai restaurant in the Minneapolis ‘warehouse district’ called Kindee Thai.  I read a lot about that area when doing some restaurant research, but my main reason for choosing it was because it was right across the street from the Gutherie Theatre where the HLS cocktail party would be held later that evening.

I was so happy that the weather stayed gorgeous all day because we were able to once again enjoy a meal outside.  I ordered a glass of pino noir and chose the vegetable stir-fry with chicken and brown rice as my entree.

Both were absolutely delicious.

The cocktail party was a lot of fun.  It was the first time I was able to mingle with all the other bloggers that were attending the conference and enjoy a glass of wine or two!  Unfortunately, I was too busy chatting that I forgot to take any pictures except for one of the photo booth copies I took home with me (I know, a really good blogger would never forget to take pictures – fail!).

When we arrived at the venue, each of us received a note card with a word on it.  The word was either half a famous “pair” or part of a famous “trio”.  The objective was to find your other half!  My notecard said ‘Bonnie’ on it, so it was pretty obvious that I needed to find ‘Clyde’.  This was how I met Kim, the blogger at ‘Health Nest’.  The cocktail party went on until about 10:00 p.m. and when it was over, everyone was bused back to the hotel.  Since we were on vacation, Brian and I decided to head back out and grab one more drink before going to bed.  Reason #1 of 50493 that I love Minneapolis – everywhere is dog friendly!  We literally took Bailey to the bar with us and people loved it!

Day 1 was a success!  Can’t wait to recap the rest of the weekend for you, have an awesome Monday 🙂

Oh Friday, how I love thee!

Yesterday evening was actually the perfect kick-off to the weekend.  My mother was downtown trying to score some ‘Book of Morman’ tickets and asked if I wanted to grab dinner/drinks with her after I got of work.  I met her near the theatre and we walked across the river to the new ‘Lettuce Entertain You’ restaurant – Beatrix.  I had heard one of my coworkers talk about the new restaurant and read a bunch of reviews and felt like it was worth the try!  The concept was kind of neat, their motto is “Taste over Trend’, meaning that most of their dishes are healthy sustainable options… but to be honest that is pretty trendy right now 🙂

Since we went rather early in the evening, we had no issues getting seated.  The decor of the restaurant was warm and welcoming and we were able to snag seats right on their indoor/outdoor patio.

My mother and I both ordered a glass of white wine to sip while we pondered the various menu items.  There were so many delicious choices to choose from, but a few dishes stood out:

The Emerald City Salad

This refreshing and textured salad included baby kale, romaine, celery, seeds, pineapple and a mint vinaigrette.  We split this as an appetizer and devoured the delicious salad.  The pineapple worked so well with all the different textured leaves – it was wonderful!  Plus, it came with a shot of their fresh pressed cucumber apple juice!

This was the dish I ordered as my main meal.  It was absolutely wonderful and came with little mini tortillas, a vinaigrette based slaw and fresh tomatillo salsa so I could make little tacos out of it.  Honestly, the salmon was so good as is, I barely touched the tortillas.

My mother selected this beauty and boy did it taste as good as it looked.  For $16 (which is a VERY reasonable River North price) the portion was huge!  She was able to take half of it home!

Although the food was plenty, we really did not leave feeling overly stuffed.  Everything was so fresh, healthy and delicious I felt great about all the decisions we made.  Even the “banana” dessert we split with maple syrup and fresh rosemary – killer combo!

We both decided that we need to get dinner together more often, especially because in just two short years my parents will be moving out to Asheville, North Carolina to “retire” – but not really 😉

There are so many things I am looking forward to this weekend… I am try a new class at my yoga studio tomorrow morning that I think will be both challenging and rejuvenating after a week of sickness, I am attending a good friends housewarming BBQ in the suburbs and of course… DA BEARSSSSSSS GAME!  Brian and I will most likely be drinking heavily on Sunday for the game and hopefully not eating too poorly, but to counter some of those activities I have a great workout challenge for the weekend scheduled:

This will be a great combo of cardio and strength to get me pumped up for the game and hopefully keep me in a healthy mindset 😉

Overindulgence: What I Ate

Good Morning!!!!

I apologize I have been blog slacking the past few days… so many things were happening and I was not always by a computer.

Okay, okay… confession:  I had a super indulgent weekend.

It all started Thursday, when my HR department decided to go out to dinner at Frontier in Noble Square for a PIG ROAST.

Yup.

This pig was delicious.  And made really good ‘pork tacos’.

Oh how I love thee.

The good thing was that last week I started a training plan for a 10k I have coming up, so my workouts were still spot on.  However, I’m not sure they outweighed what was going into my mouth.  This left me feeling really bloated and gross come Sunday morning.  I needed to get back on track…

Yesterday I started the morning with a delicious bowl of protein oats from Protein Bar.  The oats I selected were called ‘Pancake in a Bowl’ and consisted of steel cut oats, vanilla protein, almond milk, agave nectar, a spice blend and warm gooey banana slices.

This baby was extremely filling – It kept my hunger at bay all the way up to lunch when I had a fresh and crisp salad.

After work I headed straight to the gym and ran 3 miles on the treadmill.  The gym was pretty dead which surprised me considering the 90 degree humid weather outside.  My run was followed by this circuit:

Which really made me feel great knowing I was burning off some of that food from the weekend.

I met Brian at Trader Joe’s after the gym where we stocked up on a boat load of fresh produce and protein for the week.  Thankfully, we only have one dinner planned so we won’t get as out of control as last week.

For dinner, I grilled some salmon and cooked up some fresh sweet summer corn.

Overall, I give myself a B+ for the days worth of eats and getting back on track.
